Maracuja, Passion-fruit

The aroma of this exotic fruit is noticeable above all in ripe wines of Spätlese quality and above, and is correspondingly a typical feature of botrytized Rieslings.

The aroma of passion-fruit also characterizes Rieslings from warmer wine-growing regions and from lime-rich soils, as are to be found for instance in Alsace, in Rheinhessen and around the town of Bad Dürkheim.

Passion-fruit aromas are additionally enhanced by maceration and a spontaneous fermentation. Particular yeasts are required so that these aromas can be set free during fermentation.
