Riesling - careful with the aged
Mature, high-quality Rieslings are however distinctly more fragile in their structure. They should be very carefully brought to the right temperature. The cold retards the development of the aromas, and this means a loss in flavor.
A word of advice:
Champagne coolers with ice cubes are taboo for such Rieslings, because they bring the wine near to freezing point and thereby deprive it of any kind of aromatic interplay.
